
Why pulse flour deserves a place in your gluten-free pantry
Gluten-free baking has a persistent problem. Traditional gluten-free flour blends — rice, tapioca, corn,
potato — are dominated by refined starch. They deliver acceptable texture in the right hands, but they
lack protein, they lack fibre, and finished products often crumble, dry out quickly, or taste flat.
Pulse flour changes that math. Milled from lentils, chickpeas, or fava beans, pulse flour is naturally
gluten-free, high in protein, high in fibre, and structurally functional — it binds, retains moisture, and
adds colour and flavour that pure-starch blends can’t match. Peer-reviewed work on gluten-free breads enriched with lentil flour shows meaningful improvements in nutritional and textural properties

This post is written for gluten-free formulators, artisan bakers, and product developers. It covers where each pulse flour fits, how to think about ratios, hydration, and binders, and where pulse flour compares favourably with the flours most people reach for first: rice, almond, oat, and sorghum. 1. Which pulse flour for which product
Each of the four pulse flours in the SSI line has a distinct flavour and colour profile. Start by matching the flour to the product, not the other way around.
Kabuli chickpea flour — pale, comparatively neutral flavour, familiar to consumers. The most versatile
gluten-free option in the SSI line. A strong starting point for muffins, quick breads, flatbreads, savoury
pancakes, socca-style breads, and gluten-free cakes where a mild, cereal-like flavour is preferred.
Yellow lentil flour — pale-warm, mild, gentle lentil note. Behaves similarly to chickpea in most gluten-free applications while adding a touch more protein. A good choice when a paler finished product is preferred but a lentil-family flavour is acceptable.
Red lentil flour — warmer colour, mild lentil flavour. Well-suited to gluten-free crackers, tortillas, savoury breads, and any application where a warm-toned crust or crumb is desirable.
Fava bean flour — highest protein of the four (typically 26–30%). Greenish-yellow colour, more assertive flavour. Best in gluten-free formulations where high protein is the primary driver — high-protein bread and buns, protein-forward crackers, high-protein pancake and waffle mixes. Often used as a partial contributor (blended with chickpea or lentil) rather than the sole flour, to manage flavour intensity.
2. How much pulse flour to use — thinking in ratios, not exact numbers
Every gluten-free recipe is a system, so exact substitution numbers rarely transfer cleanly. Two rules of
thumb hold up across the published literature and most formulator experience.
Yeast-leavened breads tolerate less pulse flour than chemically leavened products. Bread is more sensitive to protein-starch balance because it relies on the structure that gluten normally provides. Published work on gluten-free breads enriched with lentil flour reports meaningful changes in specific volume and crumb structure at modest lentil-flour inclusion, with the direction and magnitude depending on the base formulation (Elucidation of technological, functional, sensory properties and aroma profiles of gluten-free breads enriched with lentil flour). In practice, gluten-free bread formulators typically start with pulse flour as a minority partner (part of the total flour weight) alongside a starch and a whole-grain gluten-free flour, then adjust up in pilot trials.
Chemically leavened products — cakes, muffins, quick breads, pancakes, crackers — tolerate much higher inclusion. In gluten-free crackers, tortillas, and pizza crusts, pulse flour can act as the majority ingredient of the total flour weight while still producing an acceptable texture (Cereal Foods World, 2020). In gluten-free muffins and quick breads, chickpea flour is regularly used as the dominant flour with only a small starch component. The ceiling is usually flavour, not function.
Practical starting point. For a first pilot in a new gluten-free application, start with pulse flour as one
component of a three- to four-part blend: pulse flour for protein, colour, and binding; a whole-grain gluten-free flour (rice, sorghum, or oat) for body and flavour; a starch (tapioca, potato, or corn) for softness and lift; and a binder (xanthan gum, psyllium, or ground flax) for structure. Adjust from there based on the target texture.
3. Hydration — pulse flour is thirsty
Pulse flour holds more water than most gluten-free flours. Higher protein and higher fibre content mean the batter or dough will look and feel wetter than the same recipe made with rice flour, but the pulse flour will continue to absorb during rest and bake.
Two practical implications:
Rest the batter or dough before baking. A short rest — even 10 to 20 minutes — lets pulse flour fully
hydrate. In pancake, waffle, muffin, and quick-bread batters, this usually produces a more even crumb and a less gummy finished product.
Expect to add a little more liquid than the base recipe calls for. When adapting an existing gluten-free recipe to include pulse flour, adding a small amount of extra liquid at the start of mixing and adjusting from there is a safer approach than adjusting mid-mix.
In yeast-leavened gluten-free bread, hydration is one of the biggest levers in the whole formulation. The
right hydration is the point where the dough holds its shape but is still soft enough for a good rise. Pilot trials are the only reliable way to find it for a specific base recipe.
4. Binders — pulse flour helps, but doesn’t replace them
In classic starch-heavy gluten-free bakes, formulators rely on xanthan gum, psyllium husk, ground flax, or ground chia to bind the dough and hold gas bubbles.
Pulse flour reduces — but does not eliminate — the amount of binder a formulation needs. Because pulse flour is naturally high in protein and contains some starch and fibre with useful water-holding capacity, it does some of the structural work a binder would otherwise do. In practice, most gluten-free bread and cracker formulations that use pulse flour still include a binder, just at a lower level than a starch-only blend would require.
Xanthan gum remains the most common choice in industrial gluten-free bakery. Works predictably,
produces consistent crumb.
Psyllium husk is popular in artisan and higher-fibre gluten-free bread, particularly in bread and bun
formulations that use pulse flour. It supports oven spring and a moist crumb.
Ground flax or chia is less industrial but works well in muffins, quick breads, and pancake mixes that already lean higher-fibre and higher-protein.
The right binder is the one that produces the texture you want at the lowest inclusion. Test one variable at a time.
5. How pulse flour compares with the flours you’re already using
Most gluten-free formulators already work with rice flour, almond flour, oat flour, or sorghum flour. Here’s how pulse flour compares — pragmatically, in a bakery context.
Pulse flour vs. rice flour. Rice flour is the most common gluten-free base flour. It is bland, gluten-free, and low in protein and fibre. Pulse flour adds protein, fibre, colour, and structural function that rice flour lacks. Most bakers use them together: rice flour for neutral body, pulse flour for protein and binding.
Pulse flour vs. almond flour. Almond flour is protein- and fat-rich, produces a moist, tender crumb, and is expensive. It is also a top allergen in many jurisdictions. Pulse flour offers a similar protein contribution at meaningfully lower cost and is not a top allergen in most jurisdictions. Almond flour and pulse flour can be complementary — almond for tenderness and richness, pulse for structure and cost balance.
Pulse flour vs. oat flour. Oat flour is mild-flavoured, contributes fibre, and is comparatively affordable. Its cross-contact risk with wheat is a well-known gluten-free-labelling consideration. Pulse flour tends to contribute more protein and stronger binding than oat flour and does not carry the same cross-contact profile when sourced from a dedicated or well-controlled facility.
Pulse flour vs. sorghum flour. Sorghum is a common whole-grain gluten-free flour with a mild, slightly sweet flavour. It complements pulse flour well — sorghum for whole-grain body and neutral flavour, pulse for protein and binding. Many gluten-free bread and cracker formulations use both.
The most reliable gluten-free formulations are usually a small blend of complementary flours, not a single- flour hero. Pulse flour is a strong candidate for the protein-and-binding role in that blend.
6. Troubleshooting common issues
Finished product tastes beany or grassy. Reduce total pulse-flour inclusion, switch to chickpea or yellow lentil (milder flavours), or blend two pulse flours (e.g., chickpea plus a smaller share of fava bean). In sweeter products, a small increase in flavouring (vanilla, citrus zest, spices) often masks a mild pulse note.
Crumb is dense or gummy. Usually a hydration or binder issue. Reduce liquid slightly, extend the rest before baking, and check that the binder level is not too high. If using yeast-leavened bread, hydration is often the primary lever.
Loaf collapses in the oven. Usually under-structured. Consider adding or increasing the binder (xanthan or psyllium), reducing hydration, or blending in a small share of fava bean flour to raise total protein.
Crust is too dark. Pulse flours are relatively high in lysine, which participates in Maillard browning (Cereal Foods World, 2020). Slightly lower oven temperature, tent with foil, or reduce total pulse flour if a paler crust is required.
Batter separates or thins on standing. Pulse flour is thirsty and continues to hydrate; a very thin batter will usually thicken with a short rest. Rest 10 to 20 minutes and re-check consistency before baking.
