Looking for a cookie that’s both delicious and a little bit nutritious? These Red Lentil Flour Chocolate Chunk Cookies hit the sweet spot. By including both traditional flour and red lentil flour, you gain added protein and fibre, along with a subtle, nutty flavour that perfectly complements rich, melty chocolate chunks.

INGREDIENTS
  • 1 cup salted butter softened
  • 1 cup granulated sugar
  • 1 cup light brown sugar packed
  • 2 teaspoons pure vanilla extract
  • 2 large eggs
  • 2 1/3 cups all-purpose flour
  • 2/3 cup red lentil flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • 1 teaspoon sea salt
  • 2 cups chocolate chunks (or substitute with 1 ½ cups chocolate chips – 12 oz)

INSTRUCTIONS

    Preheat oven to 375°F (190°C). Line three baking sheets with parchment paper.

    In a medium bowl, whisk together flours, baking soda, baking powder, and salt. Set aside.

    In a large bowl, cream together butter and sugars until well combined.

    Beat in eggs and vanilla until light and fluffy (about 1 minute).

    Roll 2–3 tablespoons of dough into balls and place evenly spaced on prepared baking sheets.
